Semolina (Soji) Cake Recipe

Ingredients

250g butter2 cups milk
1 heaped cup self raising flour1 heaped cup of semolina
1 heaped cup desiccated coconut1 cup sugar(add more if you like it sweet)
1/2 teaspoon elachi (cardamom) powder1 handful of colored almonds

Method:

  1. Heat the butter and milk together and then leave it to cool.
  2. Add the dry ingredients into the buttermilk and mix well.
  3. Preheat your oven to 160 degrees Celsius.
  4. Pour the mixture into a baking dish and bake for 25-30 minutes.
  5. Whip the dessert cream and pour over the cake once it has cooled.
  6. Decorate it with almonds.

    I tried this recipe, it was simple and easy. Baked according to the instructions given, came out delicious. Was an instant hit with my family they loved it!!!!And its egg free as well so that’s an added bonus!

    Can dessert cream be poured over hot cake soon as it comes out the oven????I have heard of this style as well but never tried it.

      Hi Neerie. Thank you for your comment. Dessert cream can be poured over the cake.

      It depends on an individual… Dessert cream also enhances the cake, so if you pour over a hot cake, it will be absorbed into the cake making it more rich…
      When you pour out on a cold cake, a little dessert cream is absorbed and it creates an appealing presentation to the eye.
